Caesar Salad Food Poisoning

Caesar salad could cause food poisoning. The romaine lettuce in the salad is one of the most common causes of food poisoning and has had multiple recalls in the past few years for contamination. Also, traditional scratch-made caesar dressing uses raw eggs that can contain salmonella.

Instructed to remove shield and clean and sanitize equipment, and clean at adequate frequency to prevent buildup of soil on food-contact surfaces and maintain. - comments: observed tcs food items held at improper temperautre in the serving area upright warmer at the following temperatures: egg sandwich at 127. 4f, cooked sausage at 118. 1f. Management discarded approximately 5lbs of product valued at approximately $50. Instructed to maintain all tcs items at or above 135f at all times. Priorty violation. 7-38-005 citation issued.

- comments: observed tcs food items held at improper temperuatre in the serving area self-service table at the following temperatures: yogurt parfait at 67. 4f, caesar salad at 63. 6f. Management discarded approximately 20lbs or product valued at approximately $200. Instructed to maintain all tcs items at or below 41f at all times. Priority violation. 7-38-005 citation consolidated with violation #21.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed insulation panel in 4-door upright warmer in kitchen area in poor repair, with exposed insulation. Instructed to repair or replace panel in upright warmer and maintain nonfood-contact surfaces of equipment in good repair.

- comments: observed no chemical sanitizer concentration test strips on-site for use with 3-compartment sink sanitizer. Instructed to provide chemical sanitizer concentration test strips for all food-contact sanitizers used on-site and maintain. Priority foundation violation. 7-38-005 citation issued.

- comments: observed nonfood-contact surfaces of can opener to be soiled with built-up food and debris. Instructed to clean nonfood-contact surfaces of equipment at adequate frequency to prevent buildup of soil and maintain.

- comments: observed several kitchen staff missing food handler training and certificates on-site. Instructed to provide food handler training to all kitchen employees and maintain certificates on-site at all times.

60. Previous core violation corrected
- comments: observed the following violations from inspection number 2576179 on 5/22/2023 not corrected at time of inspection: #55 'found unused dishmachine inside dishwashing room. Also, found unused steam table at teachers serving/dispensing areas. Must remove all unused equipment. ' instructed to correct and come into compliance. Priority foundation violation. 7-42-090 citation issued.
