Egg Food Poisoning

Eggs are a high risk of causing food poisoning. Chickens may carry salmonella which can contaminate the inside of eggs before the shells are formed and afterward egg may become contaminated from poop in the area they are laid. Symptoms from salmonella can include bloody diarrhea and vomiting.

- comments: noted broken hot water faucet and no hot running water at handwashing sink at rear food prep area at the time of inspection. Instructed to have hot and cold running at all hand wash sinks. Priority violation 7-38-030(c)

- comments: observed the handwashing sink in the rear prep area not stocked with hand soap. Informed person in charge that hand soap must be available at handsinks at all times. Food handlers obtained hand soap for the hand sink during the time of inspection. Priority foundation violation #7-38-030(c). Citation issued.

38. Insects, rodents, & animals not present
- comments: observed evidence of rodent activity on the premises. Observed approximately 5 mouse droppings and a dead mouse on glue trap along with approximately 10 dead cocroaches on the floor of the rear storage area in basement, behind bioler. Management instructed to clean and remove all rodent droppings and dead rodent/cocroaches from the affected area. Additional pest control service is needed to eliminate the pest activity. Priority foundation #7-38-020(a). Citation issued. '

- comments: observed no certified food manager with allergen training. Instructed any persons with the city of chicago food sanitation certificate to comply with completion of training. Must provide documentation.

- comments: observed poor hygienic practicies by female food handler observed her with plastic gloves on pick up a box from the garbage can and was reading what was on box with other female employee washing dishes and then she put box back on top of garbage and proceeded to put croissants into toaster and got wrapping paper and placed on counter without changing gloves and washing hands. - comments: observed evidence of appx. 100 or more mice droppings on lower railings of french fry station,on floor next to and behind hot water tank,on floor and railings of chemical storage cage,on railings and floor underneath used soda station in lobby. Must remove droppings clean and sanitize areas. Recommended to have a pest control operator to service premises on or after 4/10/24. (priority foundation 7-38-020(a)(citation issued)
