Pork Food Poisoning

You can get food poisoning from eating pork. A common infection associated with pork is Trichinosis. It can occur from eating undercooked pork that has been infested with larvae from a parasite called trichinella spiralis. Improper handling of pork and hygiene issues can also cause food poisoning.

- comments: observed plastic tub used as scoop in bulk food storage container near walk-in cooler. Instructed to remove plastic tub and replace with utensil with a handle to prevent contamination of dry food and maintain.

- comments: observed utensils (knife, scraper) stored in-between 3-compartment sink and wall in the kitchen area. Instructed to remove utensils and store in-use utensils on a clean and sanitized surface and maintain.

- comments: observed nonfood-contact surfaces of food thermometer in poor repair. Instructed to repair or replace food thermometer to ensure nonfood-contact surfaces are maintained smooth and easily-cleanable.

- comments: observed several walls and doorways throughout all areas of the facility to be in poor repair and made of materials that are not smooth or easily-cleanable. Instructed to repair or replace wall and doorway surfaces with materials that are smooth and easily-cleanable and maintain clean.

56. Adequate ventilation & lighting; designated areas used
- comments: observed no mechanical ventilation system in both employee washrooms. Instructed to provide mechanical ventilation system of sufficient capacity for all areas exposed to obnoxious odors and maintain.

Observed 2 live roaches crawling on wall behind hand washing sink in kitchen area, 3 live roaches crawling on a deli slicer on top of preparation table next to seasonings, salsa, and mustard, and 1 live roach crawling on broom stored inside of kitchen next to reach in cooler. **Warning**

- High Priority - Roach excrement and/or droppings present. Observed 1 roach egg on top of a can of tomato sauce also approximately 20+excrements on the shelf lining the wall behind the prep table in the kitchen nearby the hand washing sink. **Warning**

- High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed approximately 5 mouse droppings and a dead mouse on glue trap along with approximately 10 dead cocroaches on the floor of the rear storage area in basement, behind bioler. Management instructed to clean and remove all rodent droppings and dead rodent/cocroaches from the affected area. Additional pest control service is needed to eliminate the pest activity.
