beef, cooked sausage, cooked pasta. Approximately 25 lbs discarded. Reviewed proper date labeling. Priority foundation violation 7-38-005 citation issued.

- comments: all bulk food containers not in the original containers must be labeled with the product common name.
38. Insects, rodents, & animals not present
- comments: observed approximately 15 to 20 rat droppings under the bulk soda storage racks in the rear and 10 droppings in the bathroom washbowl cabinet. Instructed to remove all droppings, clean and sanitize all affected areas, and recommend having the pest control co. Service establishment for rats and place traps in need areas. Priority foundation violation 7-38-020 (a) citation issued.

- comments: noted food handler without effective hat/hair restraints. Must provide.

- comments: all prep area wiping cloths must be held in a clean container with a sanitizing solution.

- comments: must not store clean utensils above the rear dish hand washing sink to prevent contamination.

- comments: must not use cardboard boxes as food containers inside the coolers.

- comments: noted dirty bulk food containers throughout. ----interior of the cooks line two door cooler with excessive food debris. ----exterior door of the walk-in cooler with excessive food debris. Must clean and maintain all.

- comments: extremely slow draining hand washing sink at the rear dish washing area. Must repair to properly drain.

60. Previous core violation corrected
- comments: previous core violations from 10-19-22 report #2565827 were not corrected. #38---6-202. 15 outer opening not protected. Gap of 1/4 to 1/2' at the bottom of the rear exit door. Instructed repair issues to minimize pest entry. #47- 4-501. 12 some cutting boards in the kitchen with dark stains and deep cuts must refinish or replace said cutting boards. Priority foundation violation 7-42-090 citation issued.
