Tomatoes Food Poisoning

Fresh tomatoes could be the source of food poisoning. Tomatoes have been linked to 12 Salmonella outbreaks in the US. A Salmonella infection often occurs 12-72 hours after consumption, and is associated with stomach cramps and diarrhea.  Proper food handling practices, such as washing produce before consumption, are advised.

- comments: inerior of chest freezer with build-up of ice and excess dust/grimes. Instructed to clean and maintain. Observed pink substance at interior front plastic panel of ice machine not clean. Ice is used for human consumption. Instructed to clean, sanitize and maintain unit.

22. Proper cold holding temperatures
- comments: we observed tcs foods at improper temperature stored inside the walk-in cooler: 20 lbs of sliced tomatoes at temp of 48. 7f; 15 lbs of deli style ham at temp of 51. 8f; 20 cartons weighing 35 lbs of milk at temp of 52. 2f; 20 lbs of lettuce at temp of 51. 4f; 20 cartons of egg weighing 20 lbs at temp of 51. 8f; and cheese weighing 5 lbs at a temp of 51. 8f. Manager voluntarily discarded a total of 115 lbs of food at a total value of $250 dollars. Priority violation, 7-38-005. Citaiton issued.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: we observed walk-in cooler at air temp of 50f to 52. 1f. Cooler must maintain air temp 41f and below. Tcs food items were stored in unit: tomatoes, ham, milk, lettuce, egg, and cheese. Manager was able to corrected problem by turning on the unit. Presently air temp of 38. 7f priority violation:7-38-005,citation issued.

- comments: gap of 1/4' to 1/2' at bottom of front door. Repair issue to minimze pest and insect entry.

- comments: accumulated grease and food debris on walls, utility connections and equipment surfaces behind cooking line. Must clean and maintain. Also excess grease inside the deep fryer(rear area of the unit),clean and maintain

- comments: leaking faucet at three compartment sink. Repair and maintain. Metal door of walk-in cooler at east by cooking unit in poor repair: broken. Was repaired with metal sheets which presently is broken. Surface must be smooth cleanable and non-absorbent material.

- comments: grease on floor under cooking equipment,debris along baseboard walls. Under shelves in prep and storage area. Clean and maintain.

Observed a dead roach inside a metal container with lettuce, stored inside a single prep cooler across from the handwashing sink in the rear food prep area. Also, observed a live roach crawling inside of a two door prep cooler, at the top part with uncovered food items such as tofu, raw beef, cooked beef, sliced onions, and sliced tomatoes. The two door prep cooler was located to the right of the cooking line across from the ventilation hood. Approximately 10 lbs at $80 was discarded at this time. Instructed food shall be safe and unadulerated at all times. Priority violation 7-38-005, citation issued

- comments: observed black, brown and pink substance build up on the interior panel above the ice inside of the ice machine. Ice used for human consumption. Instructed must remove build up, clean, and sanitize. Priority foundation 7-38-005, citation issued

- comments: observed improper cold holding temperatures of tcs foods inside the walk-in cooler and a prep cooler on the left of the cooking line across from the ventilation hood. Foods found out of compliance were: sliced tomatoes (46. 7f), eggs (46. 0-53. 9f), and chicken (47. 6f). Manager discarded approximately 10lbs at $60 worth of product. Must have cold holding foods at 41. 0f or below at all times. Priority 7-38-005, citation issued

- comments: observed 3 live roaches in the rear food prep area, at the time of the inspection. The live roaches were observed in the rear food prep area in the following areas: on the floor under the metal shelving unit with boxes of sandwich bags stored, on the pipe under the two compartment sink near the ventilation hood, inside the prep cooler with uncovered food items, prep cooler located to the right of the cooking line across from ventilation hood. Instructed to eliminate live roach activity, clean and sanitize affected areas and recommended contacting pest control for a service. All affected food items were discarded at this time, mentioned in violation #13. Priority foundation violation 7-38-020(a), citation issued

- comments: observed dead roaches on the floors and surfaces throughout the facility. Observed dead roaches on the floors under all cooking, washing, and shelving units equipment in the rear food prep area and the front server station. Observed dead roaches inside of the single prep cooler across from the handwashing sink in the rear food prep area and inside a cabinet with a plastic door in the beverage prep area. Instructed to remove all dead roaches, clean and sanitize all affected areas and maintain.
